As for the Bourbon Barrel Stout, apparently the munchkins are still working
cause it just keeps getting mellower and mellower. By the time my last pour
is poured it will probably be perfect... maybe I'll "get it" next time :)
I've heard that if you don't do anything long enough, things get better, and
I'm wondering if this might be some kind of brewer's maxim.

I'm also wondering if our fine young BBS sourness was predominately lacto
acid (cream stout) or if there was some acetic acid as well, and should both
equally mellow with age in a higher gravity brew?
